Potato Recipe of the Month

Classic Russian Salad

  • 1 lb new potatoes – scrubbed, boiled, cooled & diced
  • 1/2 lb carrots – peeled, boiled & diced
  • 1/2 lb cooked runner beans – diagonally sliced
  • 1/4 lb peas – boiled & drained
  • 3 eggs – hardboiled, separated & chopped
  • 1 tbsp pickled gherkins – drained & chopped
  • 1 tbsp capers – rinsed & drained
  • 2 tbsp fresh parsley – chopped
  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 1/2 pint mayonnaise

1. Mix the oil and vinegar together

2. Put the potatoes, carrots, beans, gherkins, peas & capers in a large mixing bowl then pour on the vinegar and oil. Season and mix well. Cover with cling film and refrigerate for 2 hours.

3. Remove, add the eggs and parsley then pour on the mayonnaise. Mix well and serve.
